Kale is easy to grow but prefers cool weather, i guess it's the reason why it's so expensive in your region. I thought about baking kale chips too but for coating, it needs quite a lot of oil......hmmm.....let me think about it first....hehehe
We can't grow it here at all and only recently can see some imports of it. You can just spray a bit of oil n bake (like dehydration), my sister is a health nut so she wont use much oil and it turns out ok.
